Panipuri Recipe
Pani puri is a popular street food in India that consists of small crispy hollow balls filled with spiced potatoes, chickpeas, chutneys, and a tangy mint-coriander water. Here's a recipe to make it at home:
Ingredients:
For the puris:
1 cup semolina (sooji)
1/4 cup all-purpose flour (maida)
1/2 teaspoon salt
1/2 teaspoon baking powder
Water, as needed
For the filling:
1 cup boiled and mashed potatoes
1/2 cup boiled chickpeas
1/4 cup chopped onions
1/4 cup chopped coriander leaves
1/2 teaspoon roasted cumin powder
Salt and red chili powder, to taste
For the pani:
1 cup chopped mint leaves
1 cup chopped coriander leaves
2-3 green chilies
1-inch piece of ginger, peeled and chopped
1 teaspoon roasted cumin powder
1 teaspoon chaat masala
1/4 cup tamarind pulp
Salt and sugar, to taste
4-5 cups of water
For serving:
Sev (crunchy noodles)
Sweet tamarind chutney
Spicy green chutney
Chopped onions
Instructions:
To make the puris, mix semolina, all-purpose flour, salt, and baking powder in a bowl. Gradually add water to make a firm dough. Knead the dough for a few minutes, cover it with a damp cloth, and let it rest for 20-30 minutes.
Meanwhile, prepare the filling by mixing mashed potatoes, boiled chickpeas, chopped onions, chopped coriander leaves, roasted cumin powder, salt, and red chili powder.
To make the pani, blend mint leaves, coriander leaves, green chilies, ginger, roasted cumin powder, chaat masala, tamarind pulp, salt, and sugar in a mixer. Add 4-5 cups of water to make a thin consistency.
Divide the dough into small balls and roll them out into thin puris using a rolling pin. Cut the puris using a round cutter or a small bowl.
Heat oil in a deep frying pan and fry the puris until they puff up and turn golden brown. Drain excess oil on a paper towel.
To assemble the pani puri, gently crack a small hole in the center of the puri and fill it with the potato-chickpea filling. Dip the filled puri into the pani and top it with sev, sweet tamarind chutney, spicy green chutney, and chopped onions.
